Sauerkraut (English: pronounced /ˈsaʊ̯ɻˌkɻaʊ̯t/, German: [ˈzaʊ.ɐˌkʁaʊt] (help·info), Yiddish: IPA: [ˈzɔi̯.əʀˌkʀɔi̯t]) is finely shredded cabbage that has been fermented by various lactic acid bacteria, including Leuconostoc, Lactobacillus, and Pediococcus.[1][2] It has a long shelf-life, and a distinctive sour flavor, both of which result from the lactic acid that forms when the bacteria ferment the sugars in the cabbage.
one of the finest forms of cabbage ever created IMHO

now, i am by no means a health nut, not at all actually, but that does sound like it has many benefits as well. i've never tried this dish before. seems like it would go well with many asian dishes. one day i will eat cabbage from all parts of the world |
