If a challenge reads:
Play 20 Pot Limit Cashgame Hands or
Fold/Raise 100 consecutive hands (calling is not allowed)

.....do I have to play 100 hands on 1 table, or can I also open 12 tables---> play 1 orbit on each table (12 x 9 = 108 hands)

It depends on the challenge. The best way to check is to click on the "Task Details" and see what the actual task is.

Both the tasks you mentioned are multitable friendly if they're from the challenges I think they're from (the first being from one of those Intro challenges, and the second being from the Ferguson PreFlop challenge).

Some tasks don't do this. For example, I think Jen Harman has a task where you have to win 5 pots of 8 BB or more in one session. Generally, 'session' means 1 table tracked from the first hand you play until you stand up. So, those 5 hands have to be at the same table to work. However, since that task has 3 bubbles, you can multitable each bubble individually (i.e. if you have 2 tables running, play until you get at least 5 qualifying hands on both. Getting 2 qualifying hands on one and 3 on the other won't get you anything.)

Again, be sure to check task details. FTP has "filters" that they use to evaluate your hands, and these filters are directly written into the task details. There may be little things in the task itself that aren't in the filter (i.e. all of Taylor Caby's timing tells - FTP can't track that, but they can track your results.) Additionally, there may be things in the task details that aren't in the filter (i.e. how many players need to be dealt into the hand, a list of the qualifying hole cards, etc.)
